Lemon peel simple syrup
Captivated by the bold flavors of Amalfi Coast lemons, I aimed to capture their vibrant sour and sweet taste in a delightful simple syrup. This syrup is an excellent staple for any kitchen, perfect for adding a zesty twist to beverages.
Ingredients:
1 cup white sugar
1 cup fresh water
5 lemons peeled
Equipment:
Peeler
Glass jar or bowl with air tight lid
Pot that holds 3 cups
Steps:
Wash your lemons in a fresh cold water with a few splashes of white distilled vinegar. This removes any debris from the peel and makes it ready for use.
Peel your lemons. Ensure that not too much pith (white portion) of your lemons is attached to the peel.
Once all your lemons are peeled, put them in the glass container and cover with sugar. Give cover and give the container a nice shake to ensure the lemon peels are fully coated in sugar.
Place glass container of sugar and lemon peels in your fridge for overnight. Shaking occasionally or just opening the container for a few smells of that lemony goodness.
The next day, boil 1 cup of water in your pot. Once water is to a boil, place your lemon peel and sugar mixture to the water. Reduce heat to simmer and stir occasionally till all sugar has dissolved. Simmer around 30 minutes.
Strain the simple syrup into a heat safe container and leave on the counter to cool. Once cool to the touch, place in the fridge for around 2 weeks.
